John Cabot entered the wine business as a 25 yr old Organic produce farmer. In 1998 I was starting to realize what a unique and optimal climate we had for outstanding wine production. SO in 1998 we planted our first 7 acre vineyards of own rooted Syrah, Zinfandel, Cabernet Sauvignon and Merlot. After achieving critical praise for our initial vintages, and after repeated visits and persuasion, we were able to purchase the dream site, that is now our estate vineyard and winery. we cleared and planted 3.2 acres of own rooted vines and buildt a 3600 sq ft winery. We took advantage of the slope and dug the building into the hill in order for it to not only blend in well with its surroundings, but take advantage of the natural climate control the earth provides. The soil are extremely rocky with Shale, schist and quarts being the main constituent, which makes for naturally low vigor, small berries and high concentration in the wines.
In the winery our goal is to let the wines make themselves. employing natural yeasts for our fermentations and aging in mostly neutral French oak. We want the varietal and vineyard to be the star. We attempt to pick our fruit at a point where we have nice fruit characters but good natural acidity and varietal character. We want the purest expression from each vineyard, we have three small vineyards and each one has a very distinctive and consistent personality that comes through in the wines every year.
We took a chance on our unique climate up here in the Klamath River Valley, Humboldt county, and after 20 years its proven itself to be one of the top viticultural areas in Ca. we hope you appreciate our effort bringing you true expressions of each wine from this auspicious place, Humboldt County.
